A neutral barrel is a used wine barrel that has been through enough vintages that it no longer contributes meaningful oak character to your wine. The wood pores are saturated with wine, the tannins are depleted, and the toasted surface layer that gives wine its vanilla, spice, and smoke notes is gone. The barrel still functions as a container and still allows the micro-oxygenation that helps wine develop in barrel. But it no longer gives you new oak flavor.
What Does ReCoop Do to a Neutral Barrel?
Our patented process removes the wine-saturated wood from the interior of the barrel, exposing fresh virgin French oak underneath. We plane the interior with the grain, removing between one-quarter and five-eighths of an inch of wood depending on the barrel condition. This exposes wood that has never touched wine. It has never been toasted before. It is, in effect, a new barrel interior inside your existing barrel staves and hoops.
After shaving, we toast the newly exposed wood to your specification using controlled burners. You choose medium, medium-plus, or heavy toast based on your varietal and winemaking goals. The result is a barrel that performs like a new barrel, at a fraction of the cost.
Why Does This Matter for Your Wine?
The oak contribution to wine during barrel aging comes from the top layer of wood. The tannins, the lactones responsible for vanilla and coconut aromas, the guaiacol and phenols that give smokiness, all of these come from the first layer of wood that touches the wine. By removing the spent layer and re-toasting, you restore all of those contributions. Your wine does not know the difference between a ReCooped barrel and a new one.
The difference is in your bank account. A new 60-gallon French oak barrel runs approximately $1,200 to $1,400. A ReCooped barrel costs $395 to service or $495 to purchase from us. On 100 barrels, that difference is $80,000 or more per year.
